You pretty much answered your own question ..."they go through stages like this"
Dont worry until its been about 2 weeks since he last ate.
Im sure he will be fine Kazzy

It is not uncommon for Oscars to do this, I have certainly experienced this myself. Is it just the pellets he is not eating? How is his breathing, is it labored?
If he refuses to feed again today than cease feeding for a couple of days and see what happens on Wednesday.
I may not always be right, but I am always the boss
If you can't ignore an insult, top it; if you can't top it, laugh it off; and if you can't laugh it off, it's probably deserved
Your waterparameters are fine, so i guess there's nothing to worry about.
Oscars can do without food for quite some time.
My red refused all pellets when he was little, just stopped eating them and left them for the SD's to eat.
I went to the local bait shop and got him a box of mealworms.
He went totally crazy for them and immediatelly started feeding again.
But...he still refused all pellets and he only ate mealworms and bugs for over a year.
He got spoiled real easily.
Strange thing is that after a year he went through the same routine and now started to eat pellets again.
Give him some more time, or switch his diet to bugs and worms.

Have you been feeding only hikari pellets, if so this can and often does happen. A varied diet is a good idea with oscars as they can get to the point where they will go off their regular food but not eat other sorts. Do as OFL says and dont feed for a couple of days, hunger will soon get him eating
his breathing is a little laboured, but it has always been like that, i have lots of filtration, and he has stopped eating everything xxx
I do remember seeing that vid you posted and thinking it was odd his breathing was so labored, though. Not to say it has really anything to do with the eating issue but if I were you I would try to figure out why its occurring just to be on the safe side. Still, sounds like you got pretty much all your previous tank issues resolved successfully, so congrats on the hard work.
help his breathing is very labored, cant understand why as ive plenty of oxygen in the water and enough filtration, could he have an internal parasite, i was feeding him frozen bloodworms, could this have done it,
update have been to my pet store and they have given me waterlife sterazin, which is for gill and body flukes and other internal worms, they do not sell this product but use it on their own fish, so i got it for nothing , so wish me luck,
hi ive added a vid of ozzy , hope you can see as my camera is not good, started him on the medication yesterday, he is not staying in the corner now just swims slowly around the tank, ive ordered some live dalphine so if he is hungry he can start on them instead of puting in food which he wont eat and dirtying the tank, x
