He will be just fine. Higher quality food would help. Not a fan of frozen anything, generally low in nutrition and protein. While he is hungry, get him on a quality pellet with 35-40% protein. Vitamin supplement, some raw veg and fruit pieces.

Must admit to never hearing of this food. Couple of concerns though. No levels of protein, fat, ash, fibre, moisture or phosphorus are shown, They seem to lump all cichlids into the carnivorous category. My Severums certainly don't get the same feed as my Dovii or Jaguar. They say Hearts. Hearts of what? Beeheart? Not advisable to feed Oscars. They do not eat mammal meat. This may be a quality food, but to me, on the surface, I think you could do better. The Hikari you give your Fronts is very good for Oscars.

there nothing wrong with feeding just pallets as long as you feed a quality spirulina/algae based pellet as well as your normal meat based pellets

What kind of veggies and fruit should I use?

apple banana orange peas and many more just stay away from anything hard to digest like corn

Don't dwell on what went wrong. Instead focus on what to do next
