I've noticed when my O is stressed he becomes pale. His black turns into a more gray green. Now I just noticed when he is sleeping he is pale as hell also. I'm assuming this is normal?? Is there any point I should be concerned?

As long as he's acting normal and pooping normal I wouldn't be concerned. Oscars have a lot of different moods. When my wild Marajo is stressed/spooked he goes the exact opposite of pale; jet black with bright stripes. However, when feeding or getting pissed off at me he gets a greenish background with bright stripes lol. When calm and just cruising he's more of a brownish, tan background with faint stripes.
