I have never had crayfish/lobster before, apart from my dinner plate of course

A few things to consider. In order for crustaceans to grow they have to shed their outer skin, in other words the hard shell. They do this every few weeks and are extremely vulnerable at this particular time because they are very soft for a few hours. So you would need some decent hiding places where they can go. It would be no good if the fish could get to them. Also, bear in mind that they may well injure tish at night when they are sleeping.
