Hello! I rescued 3 Jack Dempseys this weekend and I am going to move them into an empty 55 gallon. They seem to be enjoying hiding. Can I put some small pieces of PVC pipe in there with them for them to hide in?

yes you can or even a clay pot will do. just make sure they don't have
sharp edges that may cause injury when the are shock and darted away
hitting such hiding place.

PVC pipe is ok in tanks but remove or replace with bigger pipe when the fish start to get bigger, you dont want a fish getting stuck or injuring itself
I can't get no sleep
