nitrates will not go crazy if you are showing ammonia, the cycle runs, ammonia to nitrite, nitrite to nitrate, you want to see nitrate. not near as bad for your fish as the other 2. if tank cycled you will show 0 on ammonia and nitrite. and have some nitrate.

I am quite concerned about you zero nitrate, have you disrupted the filters recently? You should always have some nitrate

What's your ph of your tank? What's the ph of your tap?

What's the nitrates of your tap?a

Most of the time oscars are safe even in water with 0.25ppm ammonia. Scale back your water changes to see what the ammonia is 24 hours after a water change and 48 hours after a water change.

I haven't checked the PH level to be honest. Only ammonia, Nitrite and nitrate. And tonight is when I discovered the ammonia.

agreed on both, this is why i asked for no water changes for next 48 hours to see if tank is cycled. :)

If I ever clean the canisters, I clean out the sponges at the bottom, and only gently rinse the Bio media with some prime treated water.

But that is it.
