we did a 30% water change 3 days ago because we have ammonia in our tank reading 3.0.we have done another 50% water change today .we left it for a while then did another test which reads 2.0, should i leave it for a few day or do another 50% change again tomorrow. thanks

You should probably carry out a 70% water change but don't check the water straight after, let things settle down and test the next day.

When you have a problem like yours there is nothing wrong with doing 2 or more water changes in a day to get your ammonia under control and at a lower level
