hey matt, welcome on board! sorry to bring the bad news,
pH is not the basis for introducing the fish in the tank.
the ammonia and nitrite should be zero, while nitrate should
not be higher than 20...and you can attain that when the tank
is fully cycled. please read the tank cycling in the home page.

Hi matt, Paul is correct there's a bit more to it than PH. have a read of this link.

But as to answer your question in general a PH of 7.6 would be fine if your tank is cycled correctly. convicts come from a wide Ph range from 6.6 to 7.8 and temp from 26-29c

It is very important that you get an understanding of the different toxins that are often found in an aquarium environment. Have you got some test kits that will test for the ammonia, nitrite and nitrate? I would advise against getting any fish until you have got the various test kits. Okay, you can take a sample of water to your fish store but obviously there will be times when they are not open and you need to know what your water conditions are.

Thanks guys..

yeah i have the appropriate test kits and have researched the nitrogen cycle.

Also will the ph change once the fish go in or should it remain constant at the level it is before the fish go in??

PH will not be static and does change. What sort of changes you will experience is something I cannot really say, but just bear in mind that it will change so don't worry if you do notice changes.
