Looks thicker than that, but at any rate, just enough to cover the bottom, like 1/4 in makes cleaning easier and overall water quality management easier as well. Your filter is giving you about 4x turnover per hour, which is a bit under the general recommendation for canisters. Your tank with a heavy(over) stock would benefit from some mechanical assistance. Large hob like an Aquaclear 110 would help. 2 would be obviously better.

yeah, in some places it is thicker that 1", but overall the amount of substrate covers 1" if layered evenly

I will have to agree with Suprd71 that there is too much substrate. No benefit to it at all unless you are thinking of putting plants in (that can feed of the nutrients that collect), but plants and oscars are rarely a good combination. Better to take at least half of it out.

Wanted to try with some plants. I believe I should get some hardy ones with thick leaves...
About my filtration, apart from the odyssea, I have a boyu submersible with capacity 1400L/h. I have three sponge layers, but so far they are all almost clean...I think the water current is not pushing debris in there

That will take luck because #1 favorite thing most oscars like to do with plants is destroy.
