Typically if I see someone post a nitrite of 20 and a nitrate of 0, I make the logical assumption that they mixed them up. Happened to me all the time when I first got into the hobby/obsession/way-of-life ;)

MattsOscars, Yes, it is easy for me to mix up the two nitrite and nitrates. Made a log sheet so I can track results. Put down what I do to correct problems, like how much Prime used to bring down ammonia.
Draco - I do enjoy Oscars. They are relaxing, when I can sit and watch and they are like little dogs as they are interactive and entertainng.

RoxytheDog - Yes I always add prime to tap water to compensate for ammonia in tap water. It's higher when we don't get much rain, and the ammonia is lower when we have more rain. We've had almost 5" this past week, so ammonia level is almost 0 right now. I am going to start collecting clean rainwater from now on. Got several 2 gall jugs I can store it in. We'vr got more rain coming tues and maybe even snow.

Do I continue doing what I'm doing, freqent 30-40% w/c's? and how much if any Seachem Stabilizer should I be using now. This is day 7 of adding it to fix bb load. Or, now since I got the readings right just let prime, w/c's and fish finish up cycle?

Still can't get Kaylee to eat peas, but she did take her cichlid sticks this am. She is still a litttle wobbly, but she getting away from filter intake. Still don't see any obvious pooh. Hard to see in gravel, but will look for it when I clean today.

You kind of answered your own question. I've not done stability past the 7 days recommended. It just takes a couple days after for things to even out. Stick to your water changing regimen, and prime is good to protect for 48 hours so no need to dose that every day. I would just use a de-chlorination to make the tap water safe with all the water changes in between prime doses.
